Right off the top of my head:

"The Real Me" from Quadrophenia by The Who. The lamentably late John Entwhistle on bass.

"Pump It Up" from This Year's Model by Elvis Costello and the Attractions. Bruce Thomas on bass.

Oh...Tina Weymouth lays down a huge groove on "Girlfriend Is Better" from Speaking In Tongues by Talking Heads.

For shear balls out, pedal to the metal, pure kick-ass bass playing:

Song: Apostrophe (from Frank Zappa's "Apostrophe" album)
Bass Player: Jack Bruce (as one third of the killer power trio of Zappa, Bruce and Jim Gordon)

For quality and depth of the bass:

Song: Shelter Me (from Buddy Miller's "Universal House of Pray")
Bass Player: either Rick Plant, Byron House or Alison Prestwood (it's not all that clear from the credits) However it is the recording engineer (Buddy Miller) and producer (Buddy Miller) who really should get the credit on this track.

And of course, there are those handful of bass players who have really helped to reinvent the art of bass playing:

Aston Barrett - the bass player from the original Bob Marley and the Wailers
Bootsy Collins - the bass player from Funkadelic and the JBs

and

Bernard Odum - the bass player with James Brown in the 1960's and therefore the most "sampled" bass player in history.

Try The Talking Drum from King Crimson's The Nightwatch cd for good bass as well as Larks Tongues In Aspic Part 2 from the same cd.
