Here's an interesting looking little program for converting iTunes files to MP3. Anybody out there tried it yet?

iTunes will do this, provided the iTunes files are not copy-protected, i.e., were not purchased from the iTunes store. Simply choose MP3 in iTunes Preferences > Advanced > Importing > Import Using.
