You really want the center channel to match the front speakers. It is critical. Anything else will sound a bit off.
Subwoofer is different. The most important thing is that it will go well below 30hz which rules out a huge number of subs. Low tones will blend flawlessly between brands. I would look seriously at the Sunfire HRS 12. It will go down to 16hz, is a 1000w and is sealed so it sound ultra refined for music yet in home theatre can sound "like a truck is driving through the house." It is $1050 at onecall. Most local dealers will haggle and I bet you could get it for $900.
For multi-channel applications, ALL speakers should be matched for timbre, tonality & response.
Also, horizontal off-axis dispersion should be as wide as possible to provide an expanded sweet spot.
Good stereo speakers are not necessarily the best choice for HT use.
Also, the center channel will be producing the majority of the signal, especially voices.
The three front speakers should be chosen as complete & matched set.

I think the T758 is a great receiver for the money. Nothing near its price can touch it IMO.
On the other hand, I would want the Cambridge Audio 651R with those speakers; it will really be significantly better. If you are going to spend that kind of money for excellent speakers, don't skimp on the receiver.
I think you would be better off going with 2.1 rather than getting a wall-mount speaker that will degrade the system sound considerably. No wall-mount speaker will come close to matching your mains. The Maestro Grand Center speaker is what you want for 3.1.
I suggest that you look at the TechCraft MC4832B stand, which your TV can sit on and will provide a shelf below for the matching center speaker. It is around $230 from Amazon. Your main speakers can sit on either side of the stand, and that will get all 3 speakers and the TV about the same distance from the listeners. That should be a MUCH better solution in every way.
Wall-mounting the TV does not really work out well.
