A few criteria:
--the label must be mostly classical (say, over 60% -- so Reference Recordings just squeaks in)
--the label must have no fewer than 100 releases
I wasn't sure if/ how to segregate digital recordings vs. analog recordings. Or media format (LP, tape, CD, hi-rez files, streaming, etc). Also, some mono recordings (1950s, or TV or radio broadcasts) can be quite high in fidelity. (FM mono is superior to FM stereo; and very early pre-WW2 AM was better than post-WW2). All these issues can be explained in brief, contextual comments.

Honorable mentions:
TACET -- I was going to place this German label in the main list but removed it because TACET seems to concentrate on chamber and solo works, and not orchestral. Still, this is probably my favorite label for testing my audio system.
Pristine Audio (UK) -- these folks breathe new life into recordings going back to the 1920s.
Varese Sarabande -- film music, with very high sonic standards. VSD essentially take movie scoring sessions and edit them into albums. And film studios have big budgets for recording movies.
