Looking for recommendations for new speakers, amp & surround sound processor

This site is predominately 2 channel, but I hope some of our more expert members chime in, also.
I have a home theater set-up in a 480 sq. ft. room and run full range towers up front, a very large center and large surrounds on stands (Wharfedale Evo and Opus) with Marantz electronics. It would be considered a "budget" system compared to your plans.
All the brands you mention are excellent. My friend has a nice Paradigm/Onkyo HT so you can't go wrong with those speakers, IMO.
My strong suggestion, considering your budget and room size and all the variables attendant, would be to find a store/installer who has a lot of experience with 2 channel high end equip't. PROPERLY setting up a surround/HT system can be tricky and you want it to be right for music also.
One of the advantages of multi-channel is SACD and DVD-A playback. The new receivers/pre-pro's are mainly 7 channel to facilitate playback of Blu-Ray's HD audio, but not all do so. I use the "extra" 2 channels in my Marantz to bi-amp my fronts.
